Belt Cooker
Simple steam cooking of potatoes and root vegetables
For steam cooking of sensitive product, the belt cooker is the optimum choice. When processing potato granule or flakes it is important to control cell damage during the cooking process to reduce release of free starch. The release of free starch results in the finished product to become sticky when reconstituted into mashed potatoes.
The PPM Technologies Belt Cooker offers an insulated pan with top cover for easy access. The pan is equipped with a wire mesh stainless steel belt with inside return part.
The cooker includes an in-feed hopper and out-feed auger sealing the cooker. This improves thermal properties by retaining the steam inside the pan. A steam pressure controller controls the pressure in the distribution pipe along the cooker.
